The crops are handpicked into small bins, attentively sorted by hand and fermented in small tanks where the cap is gently punched-down up to five times per day.
All our wines are aged in used barrique (French, American, Austrian oak) for 18-24 months and bottled in our winery. Our winemaking philosophy is to interfere as little as possible with the process and keep fining and filtration to a minimum. This enables the wine to express the uniqueness of its Mediterranean location.
