Vinifizierung
The grapes go through a careful destemming procedure and crushing. Skin contact in order to maximize the extraction of aroma precursors. Fermentation in stainless steel tanks at controlled temperatures. After the end of the fermentation, the wine stays on the fine lees, while periodic mild stirring (batonnage) takes place for a period of 4-5 months, thus gaining more volume and complexity.
