Selection of vineyards, sorting of grapes .The harvest is done as soon as the phenolic maturity is achieved. It happens in the early hours and the transfer to the winery is done in crates.

Must extraction: After destemming, it is driven into a 1 ton pneumatic press where the first pressure must is extracted, the next stage is static demudding and with a peristaltic pump it is driven into an egg-shaped cement tank where fermentation at a controlled temperature occurs .Throughout the process, strict cleaning rules of premises and containers are implemented. Fermentation : Fermentation is carried out by the native (wild) yeasts of Muscat at controlled temperature .After fermentation the wine remains with its noble lees for 12 months.
