Modern technological vinification is implemented in trying to bring out the delicate aromas of the variety, with the use of pre-fermentation extraction at 10°C for a few hours and at a percentage of 100%. Part of the wine is fermented in stainless steel tanks, another part in amphoras and the rest in large oak barrels, known as ""foudres"", where the fermentation is concluded. The wine remains in the containers and matures on its fine lees, for 4 months.
